Spoiling foods, souring wine and worsening wounds have
a common culprit—a process called oxidation. Although the ill
effects of these chemical reactions can be curtailed by
antioxidants, creating a sturdy platform capable of providing
prolonged antioxidant activity is an ongoing
challenge.
